  Mixed Olives 2.500    50%

Method:  1. Mixing:
2. 10 min slow speed / 10 min fast speed.
3. Add mixed olives on slow speed for 1 min or until fully dispersed.

4. Method:
5. Place into oiled container and leave to bulk for 60 mins.
6. Tip dough onto floured table and scale into 300g tear drop shapes.
7. Leave to rest for 10 mins.
8. Pin out to a 2cm thickness, tear drop shape and cut as per the picture.
9. Place in a prover for 30 mins.
10. Bake (with steam) at 240C (464oF) for 20-25 mins.
