3. High Speed: 2 mins
4. Spiral: 2 mins slow, 5 mins fast

6. Dough temp 250C (770F)
7. Bulk for 1 hour
8. Scale at 420g
9. Dry prove for approx 30 mins
10. Bake for approx 25 mins
11. Bake: 2250C (4370F)
12. Water & yeast levels should be minitored and adjusted as necessary to suit processing conditions
