Method:  1. Approximate Mixing Times
2. Conventional: 15 minutes
3. Spiral: 2 minutes slow, 6 minutes fastHigh Speed: 2 to 3 minutes

4. Method
5. Mix Group 1 to a clear dough.
6. Rest for 5 minutes
7. Divide the dough into 10 x 5.4kg
8. Add Rollex Gold 1.8kg
9. Fold the Rollex Gold in to the dough piece and give 1 book and 2 half turns
10. Rest in a chiller for 15 minutes
11. Sheet down to 3mm thickness approx, cut into triangles, roll and place on baking sheet, glaze, prove and bake

12. Proof temperature 27C(80F)
13. Prove for approximately 45 to 55 minutes
14. Bake: 12 to 15 minutes 230C (450F)
