Method:  1. Place all ingredients into a spiral or planetary mixer
2. Mixing time approx. 7 min slow / up to 30 min fast (Dough Temp. 26C / 790F), until dough is fully developed
3. Rest in oiled container for at least 60-90 min (cover container with lid or plastic)
4. Divide into 400g (100g for Turkishina), place them unshaped on flat trays
5. Dry Prove (cover Turkish with plastic) approx. 45-60 min until dough is fully proved (Indentation Test)
6. Stretch dough with finger square and add Turkish topping on top or alternatively sprinkle top with black / white sesame seed
7. Pre-heat oven 235C / 4550F (steam), once bread is placed into the oven, reduce temperature to 215C / 4190F and bake for approx. 20-30 min (open damper / vent after 15 min)
Yield:  22 Turkish scaled at 400g/88 Turkishina scaled at 100g
