Method:  1. Place all ingredients into a spiral mixer (see recipe above / calculate dough temperature)
2. Mixing time approx. 7 min slow / 9 min fast (Dough Temp. 26C / 790F), until dough is fully developed
3. Rest in oiled container for at least 60 min (cover container with lid or plastic)
4. Divide into 400g, roll dough piece flat with rolling pin, pipe or place 100g filling in the middle (different filling ideas for sweet and savoury on page 26)
5. Cut 5 times on each side with a scraper, plait, sprinkle toppings on top (cheese for savoury or nuts for sweet version) and place them on setter or flat trays
6. Dry Prove (cover Savoury / Sweet Plaits with plastic) approx. 30-45 min until dough is fully proved (Indentation Test)
7. Pre-heat oven 220C / 4280F (steam), once bread is placed into the oven, reduce temperature to 200C / 3920F and bake for approx. 25-35 min (open damper / vent after 20 min)
Yield:  17 loaves scaled at 500g
