Method:  1. Dough Temperature: 25oC (77oF)
2. Scale at 900gms
3. Prove 50 minutes approx.
4. Bake for approx. 35 minutes
5. Bake at 200oC (430oF)

6. Mixing Time:
7. Conventional: 20 minutes
8. High Speed: 2 minutes
9. Spiral: 2 minutes slow, 5 minutes fast

10. Water & yeast levels should be monitored and adjusted as necessary to suit processing conditions.
